Life Changing Cinnamon Rolls

Dough Recipe:
– 1 cup milk (I use 2% because it’s what I usually have)
– 1/2 cup butter (melted)
– 2 large eggs
– 4 cups flour
– 1/3 cup white granulated sugar
– 1 tsp salt
– 1 Tbsp instant yeast

  1. Warm milk to about 110F (approximately 40-45 seconds in microwave).
  2. Transfer warm milk to the bowl of mixer and sprinkle yeast on top. Allow to bloom.
  3. Add sugar, eggs, and melted butter and mix to combine. 
  4. Stir in flour and salt with wooden spoon until dough begins to form.
  5. Use dough hook to knead dough for about 8 minutes. If dough is sticking to bowl, add 2 T flour.
  6. Transfer the dough ball to a well-oiled bowl, cover with plastic wrap and a warm towel. Let dough rise until doubled in size (approximately1 hour to 1 ½ hours)
  7. After dough has doubled in size, transfer to a well-floured surface and roll out into a 14x12 inch rectangle, about 1/4 inch thick. 

Filling Recipe:
– 1/4 cup softened butter
– 1 cup brown sugar
– 3 Tbsp cinnamon
  1. Spread softened butter over dough. Leave a ¼ inch margin at the side of the dough.
  2. Combine brown sugar and cinnamon, then spread over buttered dough. Rub into butter.
  3. Starting from the short side, tightly roll dough up. Seal the edge.
  4. Cut off ends of the dough if uneven. Cut into 12 rounds, about 1 inch each.
  5. Place the rolls in a pre-greased 9x13 dish and cover. Put in the fridge at least 2 hours, or overnight.
  6. Remove rolls from refrigerator at least an hour before baking to allow them to proof again. The rolls should grow in size a bit during this process.
  7. Bake at 400 degrees for 20 minutes.

Frosting Recipe:
– 1 cup softened butter (room temp)
– 3 cups powdered sugar
– 2 oz. cream cheese (room temp)
– 4 Tbsp whipping cream
– 2 tsp madagascar vanilla extract

  1. Beat all frosting ingredients in a mixer using the whisk attachment until fluffy.
  2. Let rolls cool for 5-10 minutes, then frost cinnamon rolls.
